what flavors would stay when dried on marinated citrus peel

Seasoned Advice Asked by Ash Deardry on September 28, 2020

I enjoy eating citrus peel and it dries super easily to save for later, my problem is that id like to marinate the peel and dry it to have more than the base slightly bitter citurs-y flavor but i’ve got no idea what flavors or methods would keep the flavor around after dehydrating

im thinking about marinating in various types of strongly flavored juices, so lime, lemon, cranberry, etc, I might try vinegar and or salt but im not sure how well that would dehydrate, I believe cloves would be quite nice but I have no idea how to marinate them in cloves

basically… help! what things can I marinate citrus peel in to create something like citrus peel jerky with added flavors, im thinking about looking into how meat is marinated for drying and copying that

I know about candied citrus and id consider it but im looking for things that keep the toughness of the peel when dried and I think too much sugar would break it down more
