Creating matrices of coordinates for a given geoTIFF

I have GeoTIFFs that are in a given projection, I’m trying to figure out what the easiest way would be to produce corresponding matrices for the the GeoTIFFs that hold the lat, lon, and meters locations for each pixel using the projections of the geoTIFFs.

Is there a straight-forward way of doing this that anyone can recommend?

I have tried to do this using GDALwarp to assign a coordinate system, and then used geotiffread in MATLAB to read the data, but I can not ascertain whether or not there is a way to use MATLAB (or another program) to build matrices that hold the coordinates information for each pixel.
