What would be the best word used to name the days that at the beginning and end of a schedule

I’m setting up a couple of columns in my restaurant-based database. One of the tables involves a restaurants schedule. It would have what time the restaurant opens/closes (i.e. opens/closes) and the days it’s actually open during the week (Mon-Fri). What would be the best name to describe this range. start_day and end_day come to mind but feel that there’s something else better. Any ideas?

What about opening_day and closing_day?

With just seven days available, wouldn't it be easier to create a table with seven days, and have a boolean switch (open/closed). In that case you could also account for the possibilities such as Open: Mon, Wed-Thurs, Sat
I know, not very likely, but what changes often according to the day of the week are opening hours (which might be shorter on days early in the week). Something like:

Tue.-Thurs.: 11:00-15:00, 17:00-23:00;  
Fri: 11:00-15:00, 17:00-01:00;  
Sat.: 9:00-01:00;  
Sun.: 9:00-18:00;  
Mon.: closed
