You cannot affix -s endings to uncountable nouns (except to a very few: advice/s, business/es, danger/s). So, you cannot affix -s ending to *mans or *womans it would be ungrammatical. The plural form is only men and women. The countable noun Person is another exception as the plural form is people, but persons is also another acceptable form but extremely formal and one which I would see in a legal document. You can affix an -s to car/s because the noun car is countable.
