I have already tried to purge and reinstall mysql-server, but that didnt work. I also researched if people already asked this question or if there is anything in the mysql documentation, but had no success. I have also tried to disable the firewall (ufw), that didnt work either.
Really appreciate any help.
Check sql modes in my.cnf. My config included an sql mode that was no longer valid (NO_AUTO_CREATE_USER) and it caused the Ubuntu 20.04 upgrade to crash without finishing...
vi /etc/mysql/my.cnf
made the following change
[mysqld]
###sql_mode = "ERROR_FOR_DIVISION_BY_ZERO,NO_AUTO_CREATE_USER,NO_ENGINE_SUBSTITUTION"
sql_mode = "ERROR_FOR_DIVISION_BY_ZERO,NO_ENGINE_SUBSTITUTION"
save and retry installing...
Explaining exactly why this sql mode is not valid in 20.04 is something to Google... HTH

This might be happening if you have previously installed Mysql and has not been completely removed from your system. Or there is a chance that your process is not finding the required file to execute mysql.
try to remove mysql completely
sudo killall mysqld
sudo apt-get remove mysql
sudo rm -rf /etc/mysql
sudo reboot
then try install mysql again
